Chef Josue Cime's New Mayan Gourmet Menu offer at Hacienda Chichen, Chichen Itza, Yucatan, Mexico


On December 28th, 2009, Chef Josue Cime unveiled his new Mayan Cuisine Menu to be offered at fine gourmet restaurant Chilam Balam at Hacienda Chichen Resort, Chichen Itza, Yucatan, Mexico. One of the newest ancient Mayan cuisine delights is Kinic Katmo, a richly seasoned black velvety sauce made with roasted chilies and Mayan herbs, served with tender chicken breasts over a thick soft corn cake; one of the few ancient Mayan cuisine recipes found in the sacred Mayan book Popol Vuh.


A few Mayan Fusion Cuisine entrees also appear in his new menu, our choice is Chef Josue Cime's new creation: Mayan Caribbean Seafood and Fussilli created with rich zesty dried Mayan chilies, organic roasted eggplant slices, jumbo shrimp, calamari, and the Chef's seafood pick of the day.
